Nutritional analysis of cultivated mushrooms of India

The fruiting bodies of the latest strains edible mushrooms were obtained from ICAR-Directorate Mushroom Research, Solan, Himachal Pradesh during 2020–21. objective study was to evaluate nutritional values including carbohydrates, proteins, fats, dietary fiber, energy, moisture and ash contents cultivated with view increase awareness regarding benefits mushrooms. samples analyzed for different parameters Punjab Biotechnology Incubator, Mohali, India. results showed 15.27 38.75% 0.84 3.88% lipids, 39.33 69.60% 30.22 40.48% fibers, 319.9 Kcal/100 g 363.1 87.02 92.44% 6.75 9.5% content. present also closeness previous studies.
